Tasting stations are based on a “grazing” concept, where guests tour various foodstations strategically located throughout the event space.

Food shooters
Food shooters are a “plated-style” hors d’œuvre offering skewered fish, meats and vegetables in stylish Cosmopolitan or Martini glasses accompanied by a colourful alcohol-infused dipping sauce.

  • Coriander grilled shrimp and charred tomato with tequila
  • Oven-roasted tamarind beef and mango with sweet vermouth
  • Mini bocconcini, grape tomato and fresh basil skewers served with a sherry-infused forest mushroom ragoût
  • Baked coconut chicken and coriander chutney with dark rum
  • Forest mushroom ragoût with baby bocconcini, grape tomato and sherry
  • Rosemary lamb in a cucumber-garlic yogurt with ouzo
  • Salmon seviche with a yellow pepper and tequila sauce
  • Vegetarian California roll with a sake-wasabi yogurt sauce
  • Chickpea tagine with pita crisps and cinnamon (no alcohol)

Shanghai barbecued duck

  • Marinated duck breast with orange, star anise, pepper, pumpkin and bay leaves carved at the station and served with scallion pancakes, hoisin and ginger sauce
    $9.00 per person

Alberta beef strip loin

  • AAA Canadian beef served with Ace Bakery breads, onion compote, mustards, horseradish, cornichons and natural jus
    $9.00 per person

    To substitute AAA Canadian Beef Tenderloin with Alberta Beef Tenderloin, please add $3.00 per person

Rosemary leg of lamb

  • Boned leg of lamb studded with garlic and rosemary carved at the station and served with hummus, roasted eggplant, minted jus and pita bread
    $12.00 per person

Sushi (2 pieces per person)

  • Assorted fish and vegetarian sushi including maki (hand-rolled cone), nori rolls, toro (tuna), unagi (eel), emi (shrimp) and saba (mackerel)
    $7.00 per person

Oysters (1.5 pieces per person)

  • Malpeques, Caraquet Bay, Bras d’Or, U.S. Deltas, Royal Miyagi, Cortes Island (seasonal).Oysters are shucked at the table with assorted sauces and dips (mild to wild), fresh lemon, fresh grated horseradish and condiments served over rock salt.
    $4.50 per person

Jumbo shrimp topiaries (1.5 shrimp per person)

  • Court-bouillon poached, pesto marinated and lime pepper marinated tiger shrimp served on skewers in a topiary tree with coriander chutney, wasabi mayonnaise, traditional cocktail sauces and lemons
    $4.50 per person

Smoked salmon and gravlax

  • Carved smoked salmon and whiskey dill gravlax with assorted breads and traditional garnishes of Bermuda onion, capers and lemons
    $8.00 per person
    For an interesting accompaniment, we suggest a traditional Danish blue cheese.

Seviche with caviars

  • Scallop seviche with lemon grass; peach and tequila tiger shrimp seviche with tomato; cilantro, lime, onion, grapefruit and vodka salmon seviche. Served with assorted flatbreads.

Roasted turkey

  • An oven-roasted free-range turkey served with rosemary and roasted garlic bulbs, a cranberry reduction and rosemary mayonnaise
    $7.50 per person
    We suggest an accompaniment of warm cranberry and apple bread pudding.

  • International and domestic cheeses garnished with red and green grapes served with flatbreads and ficelle breads

  • Small farm-produced specialty cheeses from Ontario, Quebec and New Brunswick

  • Colourful crudités display, elegantly displayed and served with red pepper dip
    $1.75 per person

Mediterranean antipasti display

  • A selection of grilled vegetables (eggplant, zucchini, roasted pepper, onion and fennel), dried Italian meats (prosciutto, capiccolo, Genoa salami), cheeses (Parmesan-Reggiano and Asiago), kalamata and cracked Tunisian green olives, sundried tomatoes, focaccia breads and tapas-style spreads and slathers
    $6.50 per person
    We suggest adding grilled seafood salad with a roasted garlic vinaigrette.

  • Penne rigate pomodoro with torn basil and shaved Parmesan
  • Fusilli with forest mushrooms in a light mascarpone cream
